These dumplings bring back incredible memories. Chicken dumplings with curry. I owe it to me friend Ida, one of the most special people you can meet. He accompanied me for several years of my life and he will truly be a person I will always remember. She was the best friend and the best partner you can have in a job, the most original and the most surprising. Thank you Ida for all those moments of laughter and confession! Even though we don't talk much anymore, I remember you every day.

These dumplings were brought to work by her and that's how I met them. They are simple but original dumplings. The ingredients are easy to come by. The key is in the curry. I recommend you use curry paste (yellow, red or green, whichever you want). For me it is the tastiest curry to cook. And, fortunately, they already sell it in supermarkets and it keeps in the fridge for many months. It's delicious. If you don't want to use curry paste, the easiest alternative is to use curry powder.

For the dough of dumplings, you can prepare it yourself in a homemade way, on the blog we have many recipes for dough of dumplings. For example: feta and spinach dumplings.

However, in this recipe we have used the dough of La Cocinera dumplings. There are two sizes, the small and the large. Perhaps the large ones are easier to assemble, but for today's recipe we have used the small ones. With these amounts, about 20-24 dumplings come out. 

As you will see in its ingredients it has prunes. Don't worry, if you are not very fond of plums, do not worry because during cooking they melt so they will only give an incredible flavor but you will not notice that they carry them. Really, trust me, do not do without this ingredient because it is essential for them to come out as rich.

The best thing about this dish is that we can leave the filling done in advance, in fact, for the dumplings and puff pastry the filling has to be warm or cold (if we put it hot it would damage the dough). And the same with the dough of dumplings or puff pastry, it should always be cold just out of the fridge.
