Easy persimmon tart

Preparation

1. We start by making the base of the cake. We put the cookies in the glass and pulverize them by programming 5 seconds, speed 10. We add the butter and program 5 seconds, speed 5.

2. We cover the bottom of a removable mold 28 centimeters in diameter with this paste, squashing it with our hands so that it is well compact. We reserve in the freezer or in the refrigerator.

3. Next we make the persimmon cream. Without having to wash the glass, we put the persimmons (without skin), the lemon peel, the juice and the sugar inside. We program 30 seconds, speed 5. Next we program 5 minutes, varoma temperature, speed 2. We incorporate the agar agar and program 2 minutes, varoma temperature, speed 2. We take out of the glass and reserve outside the refrigerator.

4. Now we make the pastry cream. Without having to wash the glass, we put in it all the ingredients of the pastry cream (sugar, milk, cornstarch and eggs). We program 7 minutes, 90º, speed 4. We remove the cream and reserve it in a bowl covered with plastic wrap, in the refrigerator

5. When all the preparations are cold we assemble the cake.

6. We spread the pastry cream on the base of cookies. On it we spread the persimmon cream. We put the refrigerator where it has to be a few hours before serving (better from one day to the next).
