In this cake the novelty is the persimmon cream that covers it: a kind of jam to which we add agar agar (gelatin also works) and that you can use in your pastry preparations.
I wanted to make a simple cake, with a base of cookies and a filling of custard cream. The latter can be substituted for curd if we want a lighter dessert.
Now that the persimmons are good price now is the time to use them. I leave you some of our recipes: persimmon cream cups, persimmon dessert and the Christmas persimmon sweet with yogurt and caramelised almonds.

Sorry I could not answer you before antes I hope to arrive on time ... I would use two or three sachets of curd with the amount of milk recommended by the manufacturer on the package. Substitute that curd for the pastry cream, everything else the same.
