The summer heat is coming and for take care these types of salads are perfect.

I had never tried the kiwi in salad, but from now on I think it will be usual. I usually did them with apple and orange and I loved this version.

It is not a very large salad. If it is to put in the center of the table in a meal, it is for 3 people. I usually make it for dinner and my husband DJs a bit and I take the rest like single plate.

La vinaigrette It is very rich, it seems very little but if we mix it well in the salad and let it rest for a while, it is much better.

Another option is to use prawns already cooked, which is much faster to do and we would skip the first step.

Kiwi and prawn salad

Ingredients

  • 250 g of hot water
  • 24 peeled raw prawns
  • 40 g of extra virgin olive oil
  • 1 tablespoon of white wine vinegar
  • 1 teaspoon of mustard
  • 1 / 2 teaspoon salt
  • 1 pinch of pepper
  • 6-8 lettuce leaves, julienned
  • 2 kiwis, peeled and sliced
  • 150 g Burgos cheese, diced

Preparation

  1. We pour the water into the glass, place the prawns in the varoma container and place it in position. We program 7 minutes, varoma temperature and speed 1. We withdraw and reserve.

  2. We throw the water out of the glass and dry it with kitchen paper.

  3. In the glass, add the oil, vinegar, mustard, salt and pepper. We program 15 seconds, at speed 4.

  4. In a bowl, we place the lettuce and on top we distribute the kiwi slices, the cheese blocks and the reserved prawns.

  5. We water with the vinaigrette and serve.
