      Ingredients to obtain 2 jars of 250gr:
      1 800gr cider squash (it was tiny and last year when I bought it): the pulp weighed 640gr
      640gr of sugar
      The yellow part of the skin of a lemon
      1 stick of cinnamon

      Preparation:
      When we want to use it, with a slightly wide board, we will hit it with force over the entire surface, so that the crust (which is very hard) breaks and detaches cleanly from the meat. If the pumpkin is ready for this operation, we will see that all the crust comes off without breaking a fiber of the meat and thus we will obtain a beautiful white ball. You have to remove the seeds well, the fibers that surround the seeds, although they can be used, are not as fine as those that are extracted from the fleshy part of the pumpkin, and with a fork, remove the threads or threads from the pulp of the pumpkin.

      1.- Sterilize the jars, I always sterilize them by putting them in a pot with boiling water for 20 minutes.
      2.- We wash and dry the citron. Give it a few blows with a board (its skin is very hard), until it breaks.
      3.- Once it has been chopped and stripped of seeds and skin, the pulp is removed in the form of threads with a fork. The pulp that has come out is weighed to know how much sugar to add.
