The other day looking at the calendar I realized how quickly time passes. Summer is there, just around the corner. So it's time to get down to business doing spring cleaning and change of clothes in the closets.

But above all it is time to start the salad season and light dishes. More than anything, because I don't want the "bikini operation" to be strict and aggressive. I'd rather take a little care of myself throughout the year than an inflexible diet for weeks.

So my proposal for today is a recipe basic, simple and very light. In which the presentation will play a very important role, since well-presented recipes always appeal more.

I have accompanied these green bean nests with a little of the ketchup that Irene taught us. It is also rich with mayonnaise but we will increase the number of calories

It is also important to comment that you can take advantage of the time and the Thermomix glass to prepare another dish while this recipe is made in the Varoma.

Ingredients

  • 180 g flat green beans
  • 2 eggs
  • 800 g of tap water
  • Ketchup
  • Salt and pepper

Preparation

  1. We will start by trimming the tips of the green beans and removing the strings from the sides. Wash and cut the beans into 4 finger lengths and then into thin strips. Distribute them on the two trays of the Varoma, reserving a place for the eggs.

  2. Then prepare the poached eggs. To do this, cut 2 large squares of plastic wrap. Brush with oil and place it on top of the beaker, as if you were going to cover the inside with the transparent film. Crack the egg and put it in the cup. Salt and pepper. To close it, you have to roll it up on itself and put an elastic band on it. So that they are like two sacks. Place in the Varoma and reserve.

  3. Meanwhile, heat 800 g of tap water for 7 minutes at 100º and speed 1.

  4. After time, place the Varoma in its place and program 7 minutes, Varoma temperature, speed 3.

  5. Remove the eggs and reprogram 4 minutes, Varoma temperature, speed 3.

  6. Spread a drop of oil on a plating ring. Place the green beans trying to entwine them. We press a little so that the structure is firm. Carefully remove the ring and place the poached egg on top. Repeat the operation with the beans and the remaining egg.

  7. Finish decorating the plate with the tomato sauce and sprinkle with freshly ground pepper.

  8. Serve right away.
