Do you remember the octopus soup rice What did we prepare the other day? Well, since I didn't spend all the octopus we decided to take it one night with a salsa very very rich: mayonnaise flavored with mojo picón.

In our case, we chose to brown the octopus, once cooked, at the the griddle. If you had the chance to do it at ember, the taste is really special. If not, put a little oil in the pan and when it is smoking, brown the octopus for 1 minute on each side. If we leave it for a long time, it will gradually dry out and become a little harder.
