We are going to prepare a plum cake with taste of hazelnuts and with chocolate on the surface. But don't be scared of the latter because, in the video that I leave you below, you can see that we will put the coverage using the spatula and without complicating ourselves too much. 

Children like it a lot and I think the chocolate has something to do with it. You can put candied fruit (like the one seen in the video), raisins or even chocolate chips in the dough. Choose the option you like the most and ... let's get to work!

And, to drink, we propose a few options: a coffee, a tea, a simple glass of milk, a Beaten or even juice they will be great.

A delicious sponge cake made with hazelnuts, candied fruit and chocolate.

Ingredients

  • 50 g butter at room temperature
  • 100 g of roasted hazelnuts
  • 2 eggs
  • 3 yolks
  • 130 g of sugar
  • 80 g flour
  • 50 g cornstarch
  • 15 g yeast

For coverage:

  • 150 g of covered chocolate
  • 25 butter g
  • 30 g of roasted hazelnuts

Preparation

  1. We turn on the oven at 180º.

  2. We prepare the mold, smearing it with butter and putting a little flour. We reserve it.

  3. We put the 100 g of hazelnuts in the glass and program 10 seconds, speed 10. We take out and reserve.

  4. We now put the 30 g of hazelnuts that we will use to put on the surface. We program 3 seconds, speed 6. We take out and reserve in another container.

  5. We wash and dry the glass.

  6. We fit the butterfly on the blades. We put the eggs, the yolks and the sugar in the glass. We program 5 minutes, speed 4.

  7. Add the flour, the starch, the 100 g of ground hazelnuts, the butter and the yeast. We program 3 seconds, speed 3.

  8. We remove the butterfly.

  9. We add the candied fruit, if we want to put it, and we integrate everything with the spatula.

  10. We put the dough in the plum cake mold that we have prepared at the beginning.

  11. Bake at 180º for 40 minutes.

  12. Once baked, we let it cool down a bit, we unmold it and let it cool completely on a rack.

  13. We wash the glass. We put the chocolate in it and program 10 seconds, speed 10. We lower with the spatula what has remained on the walls of the glass.

  14. We add the butter and program 5 minutes, 50º, speed 1.

  15. We put greaseproof paper on the counter. We put the grid on the paper and, on it, the unmold sponge cake.

  16. Cover the surface and sides of the plum cake with the chocolate coating, using the spatula.

  17. Before the chocolate cools, put the 30 g of chopped hazelnuts on top.
