    Good!

For some people, xylitol causes diarrhea, my question is: if I don't add it, will they also curdle and have a good texture?

    Thank you very much!

      Hello Goyo,
xylitol only affects taste. Set it will set you the same because that is what the agar takes care of.
You can try but, after doing several tests, I recommend that you sweeten them with something either xylitol, agave, sugar, honey.
Only fruit and agar have a strong flavor. But for tastes, colors !!
      Kisses!!
