Today's cake has no dairy or yeast products. It tastes like lemon because it is one of the star ingredients and, if you have a sweet tooth, you can serve it with a little miel.

Since the cake has a lot of lemon juice, we are going to do without the yeast. We will use a little bicarbonate which, when in contact with the acid of the lemon, will make the cake rise. 

If you don't have bicarbonate of soda, don't hesitate to use traditional yeast. It will also look good. But it doesn't hurt to know that, without chemical yeast, we can also do biscuits and cookies.

A cake without dairy products, made with honey and lemon juice. It also does not contain yeast.

Ingredients

  • The grated skin of 1 lemon
  • 60 g honey
  • 3 eggs
  • 60 g of whole cane sugar
  • 100 g of sunflower oil
  • 100 g lemon juice
  • 210 g flour
  • 50 g whole wheat flour
  • 5 g of bicarbonate

Plus:

  • Icing sugar to decorate
  • A little honey to accompany (optional)

Preparation

  1. We grease and flour a crown mold about 26 centimeters in outside diameter.

  2. We preheat the oven to 180º.

  3. We start the recipe by grating the lemon peel. We put it in the glass (only the yellow part, not the white part) and we grate during a few seconds at speed 10. We take out and reserve.

  4. We fit the butterfly on the blades. We put the eggs, honey and sugar in the glass. We ride during 3 minutes at speed 3 1/2.

  5. We add the oil, the lemon juice and the grated skin (the one we had reserved). We program 6 seconds, speed 3.

  6. We incorporate the two flours and the bicarbonate. We program 4 seconds, speed 6 and we check that all the ingredients are well integrated. If we consider it necessary, we lower with the spatula what has been adhered to the walls and we mix everything again a few seconds at speed 5.

  7. Without letting the dough rest, we put it in the mold that we have already prepared at the beginning. Bake at 180º for 40 or 45 minutes, until well baked.

  8. Once out of the oven, let it cool slightly and unmold. When it is cold, sprinkle the surface with icing sugar.

  9. We can serve it with a little honey.

Notes

If you don't have bicarbonate of soda, you can replace it with 10 grams of baking yeast (Royal type)
