Honey and lemon sponge cake

Today's cake has no dairy or yeast products. It tastes like lemon because it is one of the star ingredients and, if you have a sweet tooth, you can serve it with a little miel.

Since the cake has a lot of lemon juice, we are going to do without the yeast. We will use a little bicarbonate which, when in contact with the acid of the lemon, will make the cake rise. 

If you don't have bicarbonate of soda, don't hesitate to use traditional yeast. It will also look good. But it doesn't hurt to know that, without chemical yeast, we can also do biscuits and cookies.
