Two chocolate ice cream

Preparation

1. We put the two types of chocolate in the Thermomix glass and chop them with 2 turbo strokes. We lower the pieces towards the blades and add 225 g of whipping cream. We will reserve the rest of the cream for later. We melt the chocolate during 4 minutes, 37º, speed 2. Remove and reserve.

2. Without washing the glass, we place the butterfly on the blades, put the yolks, the white sugar mixed with the cocoa powder, the invert sugar, the remaining cream and the milk. We program 8 minutes, 90º, speed 4. When the time is up we will have a wonderful English chocolate cream especially for ice cream.

3. We program speed 2, no time and we add little by little the mixture that we had reserved of chocolate through the mouth. We add the vanilla paste and the salt. We upload the speed to 3 and beat well for at least 3 minutes.

4. We pour this mixture into a large container or bowl, cover with plastic wrap and, when it has reached room temperature, put it in the fridge and let it rest for 8 hours, although it is better overnight.

5. With refrigerator

   The next day, we assemble the refrigerator following the manufacturer's instructions and proceed to make the ice cream using the already settled and cold cream that we have in the fridge.

   When it has the texture of ice cream, it has increased its volume and the ice cream is ready, add the chocolate pearls.

   We transfer it to a container suitable for the freezer. And, after leaving an hour in the freezer it is ready to consume.

6. Without refrigerator
   
   We pour the cream into a container, better if it is metallic and freeze for 30 minutes.

   We remove the container from the freezer and mix the cream with a spoon or fork to break the ice crystals.

   We repeat this same operation 2 more times.

   When it is ready we add the chocolate pearls. And we freeze for at least 2 hours.
