It is difficult to describe this jam cake. Far from being a sponge cake, it is more like crostatas or some homemade pasta. In fact, the base is rolled out.
La jam and icing of the surface give it a different touch and also a bit of color.
It is best to make it in a large round mold, about 28 csm thick. diameter. Thus, the cake is low in height and the creamy part takes center stage.
You can use the jam that you like the most or simply the one you have at home. As always, if it is homemade, better than better.

Very easy to make and unlike any cake. This jam cake surprises and prepares simple ingredients in no time.

Ingredients

  • 3 eggs (2 yolks and 1 egg for the base and 2 whites for the icing)
  • 120 g of sugar
  • 120 g butter at room temperature
  • 200 g of pastry flour
  • 1/2 envelope of Royal type yeast
  • 60 g of Port or a liqueur that can flavor and add flavor
  • Marmalade
  • 80 g almonds
  • 40 g of sugar

Preparation

  1. We place the butterfly on the blades. We put in the glass 2 yolks and 1 egg. We beat programming 3 minutes, speed 5.

  2. We remove the butterfly and add the butter, wine, flour and yeast. We program 40 seconds, speed 3.

  3. We check that everything is integrated and remove the dough from the glass. We make a ball with our hands, wrap it in plastic wrap and put it in the refrigerator to rest, at least for 1/2 hour.

  4. Meanwhile, we can go making the icing. Without having to wash the glass, put the almonds and sugar in it. We program 6 seconds, speed 7. We incorporate the clear and program 15 seconds, speed 4. Reserve.

  5. When the previous dough has been fried for 30 minutes, we spread it between two sheets of baking paper, with a rolling pin, until we give it a slightly larger diameter than the mold we want to use. We cover with it a large round mold, approximately 28 or 30 cm in diameter, making the dough cover part of the walls. So that it can be easily removed later from the mold, we leave the baking paper that we used to stretch the dough at the base.

  6. We put the jam on top, helping us with a spoon and covering the surface.

  7. Now we place the icing, on the jam, also using a spoon to spread it. You will see that the icing is quite compact and that it does not spread easily. But nothing happens, it must not be perfect.

  8. We preheat the oven to 190º. We bake the cake for 35 or 45 minutes, depending on the diameter of the mold used.

Notes

If we do not want to use liquor, we can replace it with another liquid such as citrus juice or even milk. Always 60 g.[br][br]It is best that the portions are not too large and that it is accompanied with a glass of milk, juice or a cup of coffee.
