How delicious are these meatballs, they are lamb and stuffed with mozarella. Really. They are crispy on the outside, juicy on the inside and with a surprise, like kindergarten, but with melted cheese. The children eat them very very well and the older ones love them. They are battered with cornflakes and in its center, they carry a ball of mozzarella cheese, which melts when fried. They are delicious.

I propose them as second course of a summer cream or soup: minestrone with pesto, cream avocado and mint, or tomato with mint

Juicy and crunchy, these lamb meatballs have a surprise inside them: a heart of mozzarella cheese that melts when fried. And a curious batter: corn flakes.

Ingredients

  • 200 g of lamb meat (boneless leg is a good option).
  • 20 buffalo mozzarella balls: if you can't find the format that are balls, you can buy 200 g of buffalo mozzarella (fresh, white) and cut it into cubes of about 1 cm on each side.
  • 50 g spring onion
  • 1 egg
  • 1 tablespoon of breadcrumbs
  • 1 tablespoon of heavy cream (Ideal milk or similar)
  • 4 basil leaves
  • 1 teaspoon lemon peel
  • 40 g corn flakes (unsweetened corn flakes)
  • oil
  • 1 teaspoon of salt

Preparation

  1. Blend the corn flakes during 8 seconds at speed 5. Remove from the glass and reserve.

  2. Put two tablespoons of oil and the spring onion in the glass. Crush 5 seconds speed 5 and fry 9 minutes, varoma, speed 1.

  3. Without removing the onion, add the meat cut into pieces of 2/3 cm on each side and without nerves or fat (it is important for a good grinding), the bread crumbs, the egg, the lemon peel, the heavy cream and the salt. Shred everything 1 minute at speed 4.

  4. Take out portions the size of a soup spoon, crush them in the palm of your hand, make a hole and place a mozzarella ball in the center and form a meatball so that the mozzarella is inside.

  5. Coat the meatballs in the crushed corn flakes and fry in hot oil.

    This weekend I'm going to do them, I'll tell you about it !! I just have mozzarella, but since I don't have lamb, I'll make it with minced beef and pork. Mmmm they look so delicious ...
