Leeks with varoma sauce with romesco sauce

A different dish: leeks with varoma accompanied by romesco sauce. We often use leeks for the bottoms of many recipes, but we rarely consume them alone. Its flavor is exquisite, since it has that intensity that reminds of onion, but at the same time, that sweetness so characteristic of leek.

Today we present you a different way of taking leeks, very beneficial for their action diuretic, its high content in fiber and its low calories. We will accompany it with the delicious romesco sauce that Ana was preparing for us a while ago.

In addition to cooking them varoma, We will quickly pass them through the grill once they are cooked to give them that "quedamito" touch. Ingredients

• 2 leeks (just the white part)
• 1 liter of water
• 1/2 spoon of salt for the water
• a pinch of salt for the leeks
• Romesco sauce (recipe here)
• Oil to brown the leeks

Preparation

1. We put the water and salt in the glass and heat 8 minutes, varoma temperature, spoon speed.

2. While we wash the leeks well so that there is no rest of earth and we open them lengthwise in half. We place them on the varoma tray and add a pinch of salt.

3. We put the varoma in its position and program 15-20 minutes, varoma temperature, speed 2 (time varies depending on the thickness of the leeks). To know if the leeks are ready, we prick them with a fork or knife. They shouldn't offer too much resistance, but they shouldn't be completely soggy so that they crunch a little in your mouth when you take them.

4. When they are to our liking, heat a pan or griddle well with a little olive oil and brown the leeks on both sides.

5. We serve immediately accompanied by the romesco sauce.
