Lemon chicken with spiced broccoli

I love the recipe today! Lemon chicken fillets with spiced broccoli and potatoes. It is one of those easy and quick recipes but they are phenomenal. It is a super super easy recipe. You will love it, you will see!

How is one express type recipe, we are going to use ingredients already prepared a little: broccoli already in a microwave bag and frozen cajun potatoes. We are going to give it the different and special touch by spicing and marinating the broccoli a little. Delicious!

It is such a simple recipe that we are going to prepare it in the traditional way, today we do not use Thermomix.

Ingredients

  • 4 breaded chicken fillets
  • oil for frying
  • 1 bag of microwavable broccoli florets (approx 200-250 g)
  • 500g frozen cajun fries (potato wedges with skin)
  • 4 tablespoons of extra virgin olive oil
  • 1 tablespoon of your favorite spice mix (curry, cumin, ras-al-hanut, cajun...)
  • salt to taste
  • 1 lemon

Preparation

  1. Turn on the oven grill at 230º.

  2. We put the bag of broccoli in the microwave and cook it only half the time indicated in the instructions (we are going to finish cooking it in the oven). It will be approximately 2:30 minutes.

  3. While we prepare in a container 4 tablespoons of olive oil, a pinch of salt and the mixture of spices that we have chosen. We remove well.

  4. We take the broccoli out of the microwave, open the bag being very careful not to burn ourselves and put the broccoli in a baking dish and season with the spiced oil that we have just prepared. We impregnate all the florets well and put it in the oven so that they are toasted. We put it in the middle height of the oven.

    We cook them some 4 minutes or until golden brown, then stir and cook another 4 minutes, or again, until well browned.

    IMPORTANT: we have to be aware so that the foils do not burn.

  5. While we have the broccoli in the oven, we fry the frozen potatoes.

    When they are ready, we put them directly on the broccoli tray, stir well so that the flavors of the broccoli and potatoes mix and leave them in the oven with the oven already off.

  6. Fry the chicken breasts over high heat until they are well browned on the outside and juicy on the inside. We remove them.

     

  7. Plated

    We cut the chicken into strips. Place on top of the broccoli and potatoes.

    Cut half of the lemon into slices and place them on top of the chicken. We serve and enjoy!
