Cups of lemon cream

Today we propose a very easy dessert for the whole family: some cups of lemon cream.

The cream is lemon because it has both the juice and the skin of this citrus. We will make the base with biscuit and a splash of...something... For children I suggest it be a splash of juice. For the older ones you can put a splash of whiskey, cognac... whatever you want.

The base can be either cookie and cake. We will chop one thing or another in our kitchen robot before making the cream.

Ingredients

  • 85 g of biscuits or sponge cake
  • The skin of 1 lemon
  • 40 g of lemon juice or the liquor that we like the most (if it is for adults)
  • 65 g of sugar
  • 500g milk
  • 2 eggs
  • 40 g cornstarch

Preparation

  1. With a tip we peel the lemon. We are only interested in the yellow part, so we have to get very thin strips.

  2. We put the cookies in the glass and program 3 seconds, speed 6.

  3. We distribute the chopped cookies in about 8 glasses. Add a squeeze of lemon juice to the cookies. We can replace the juice with whiskey, cognac... if the dessert is going to be for adults.

  4. We put the sugar and the lemon peel in the glass. We program 15 seconds, speed 10. We lower with the spatula what has remained on the walls of the glass.

  5. Add the milk, eggs, cornstarch and 20 grams of lemon juice. we program 7 minutes, 90º, speed 4. We let our cream temper inside the glass.

  6. After a few minutes we program 20 seconds, speed 4.

  7. We distribute our cream in the 8 small glasses that we have with the cookie. We cover them with their lid or with film.

  8. Let cool completely, first at room temperature and then in the fridge.
