I think that lentils are my favorite legume, well and I would also tell you that it is one of my favorite dishes !! In any of its forms: in salad, stewed, with chorizo, with spinach, in cream ... I love them. So this time we wanted to give the classics a spin stewed lentils and accompany them with apple and a touch of curry.

It gives it a very interesting touch because the apple caramelizes and is soft inside. The flavor of the curry is very good to contrast with that of the slow cookers. In addition to being able to leave it ready the day before and finish it at the moment with the apple, it is also perfect for those who follow a diet vegan.

Exotic stewed lentils, ideal for vegan diets, served with caramelised apple wedges with a touch of curry.

Ingredients

For the braised lentils:

325 g of brown lentils that we will have soaked the night / afternoon before
1 cebolla
Carrots 2
4 cloves of garlic
50 ml of aceite oliva
salt to taste
a level tablespoon of chopped cumin
a pinch of pepper
a level teaspoon of hot red paprika
900 ml water
a generous squirt of white vinegar
½ iceberg lettuce cut into julienne
3 tablespoons of fried tomato sauce

For the apple:

1 fuji or pink lady apple
curry powder to taste
2 teaspoons vegetable margarine

Preparation

Put the onion, carrots, garlic, salt and oil in the glass. Cut up 5 seconds at speed 5.
Sauté for 12 minutes at Varoma temperature, speed 1.
Add the lentils, the lettuce and all the spices (cumin, pepper, paprika and curry) to the glass along with the water and vinegar. Cook for 35 minutes, 100º, spoon speed, left turn. With beaker.
Check if the lentils are already soft and if they are not ready, add time from 5 minutes to 5 minutes, again programming the 100º temperature, spoon speed, turn to the left. The cooking time depends mainly on the hardness of the water. In my case, the water has a lot of lime and it took 45 minutes for them to be ready.
Once they are to our liking, we taste them with salt and spices and rectify to our liking. We also add a little water if they are too thick. For the broth to gain body and flavor intensity, add the fried tomato sauce and let the lentils boil without a bowl at 5 minutes, varoma temperature, spoon speed, left turn.
We peel the apple, we core it and cut it into finite segments.
Heat a griddle or pan over high heat and add the magarine to melt. Add the apple and wait 2 minutes for it to brown on one side over high heat, turn it over and add the curry. Let it brown for another 3 minutes on the other side.
We place the apple on top of each of the plates.
