We are in season of asparagus so it is the best time to cook with them.

The good thing about this preparation is that, using only our Thermomix, we sauté the tips that accompany the dish and make all the cream. We do not stain frying pan, saucepan, mixer or mash ...

like the cream of zucchini Today's is quite "clear" in terms of texture. At home we like it like this, but if you want it to be thicker, you can add more potato to the ingredients or remove a little liquid before grinding it.

We show you how to make an asparagus cream with your food processor. It is a cream with a light texture and ideal for all diners.

Ingredients

  • 240 g wild asparagus
  • 30 g oil
  • 40 g onion
  • 70 g of potato
  • 30 g of celery
  • 300 g of water
  • 230g milk

Preparation

  1. We wash the asparagus.

  2. We cut the tips and put them in the glass together with the oil. We program 3 minutes, varoma temperature, counterclockwise, spoon speed. We take out (only the asparagus tips, without the oil) and reserve.

  3. To the oil that has remained in the glass we add the onion, the potato, the celery and the trunks of the asparagus cut in half. We program 3 seconds, speed 5 and then, 3 minutes, varoma temperature, speed 1.

  4. We incorporate the water and milk. We program 25 minutes, 90º, spoon speed.

  5. Add the salt and grind everything (always holding the beaker) in progressive speed 5-9 for 50 seconds.

  6. Let it rest for a few minutes in the glass, add the nutmeg and serve with the asparagus tips that we had sautéed at the beginning.

  7. Another option is to serve the cream warm or even cold.
