Light White Bean Stew with Vegetables

How cold it is these days !! It seems that two waves of polar cold have arrived almost together from northern Europe. So for these days what better than some vegetables? Eating legumes regularly during the week is very important because thanks to them we will be providing our body with very good quality proteins and hydrates, as well as fiber and vitamins and minerals such as calcium, magnesium, vitamin B ... And, of course, they have some wonderful features such as its versatility and its economical price on the market.

For today we are going to prepare some White beans very light, with vegetables and aromatic herbs. If you want, you can add chorizo ​​or bacon or, if you want its lighter version, we leave only the vegetables.

At home, every weekend we cook a plate of legumes that we either eat on the weekend or we take advantage of it to consume during the week and keep a portion in the freezer to defrost when the weather is bad.

El cooking time It will depend on the type of bean since some are softer than others, so the indications that we give you here are indicative. I recommend you try them from time to time to better adjust the cooking time.

      you're right, my fault! The bone is put at the beginning, together with the water and the beans. It is already corrected.
      About the part of the potato and the carrot I will tell you. To thicken the broth and make it more substance, we are going to crush some beans and all the vegetables. However, we leave the potato and 1 of the 2 carrots without crushing to be able to put them as decoration (as it appears in the photo) in case someone likes to eat them in pieces. I particularly love chunks of potato and carrot in stews ... but whatever you like! I hope I have clarified it, if not, tell me !!

    Hello, today I have decided to make this recipe and the flavor has been very good but the skin of the beans is very hard, is there any trick to prevent this from happening to me? I have had them for almost 2 hours because when I saw that with 1 hour they were hard ... and even so they have been soft inside but the skin is hard.
