A appetizer spectacular! We had a family dinner and it was my turn to prepare the appetizers, so I quickly remembered this simple and colorful recipe. And it is that at home we love cockles with a squeeze of lemon, so this recipe was a safe bet?

The recipe is very simple, so I recommend you buy some quality cockles since they are the main ingredient and it is good that they have a good bite and do not have soil. Cooking the cockles in the thermomix is very comfortable because they are just cooked, tender but firm.

A spectacular, really simple and very colorful appetizer: steamed cockles with lime sauce

Ingredients

500 g of water, for steam
600 g cockles
12 ice cubes
4 limes
1 tablespoon of extra virgin olive oil
freshly ground black pepper
8 coriander leaves, chopped
shawl
A few drops of tabasco or chili (optional)

Preparation

We put the water in the glass and program 5 minutes, varoma temperature and speed 1.
We place the cockles in the varoma container and wash them under the tap.
We place the varoma container in its position and program 6 minutes, varoma temperature and speed 1.
When the scheduled time is up, we check that the cockles have opened. If not, remove those that are open and leave the rest in the varoma container, programming a couple more minutes, at the same temperature and speed.
While the cockles are cooking, prepare a large bowl with the ice. When the time is up, we remove the bodies from the valves and put them in a small bowl. When we have all ready we put the small bowl inside the big bowl with the ice.
In a small container, pour the juice of 1 lime, the tabasco (optional), the coriander and the oil. We stir with a fork to emulsify the dressing.
Cut the 3 remaining limes into thin slices and arrange them on a tray. We place 3 cockles in each slice and add a little of the dressing, salt and pepper.
