Magic cake

Preparation

1. Grease and flour a removable mold (or the disposable ones) of about 20 × 20 cms

2. We separate the whites from the yolks.

3. We fit the butterfly on the blades of the glass and put the egg whites and lemon juice in the glass. The we ride in speed 4 (they will mount in approximately 4 minutes).

4. We remove the butterfly from the blades. We remove the whites from the glass and reserve them in a large bowl.

5. Without washing the glass, we put the egg yolks and sugar in it. We program 8 minutes, speed 5. After a few minutes, and before the programmed time runs out, add the water and vanilla.

6. When the programmed time is up, add the melted butter. We program 1 minute, speed 4.

7. We remove the lid and add the flour. We program 1 minute, speed 4.

8. Now add the warm milk and program 30 seconds, speed 3.

9. We put that mixture (which must be liquid) in the bowl where we have the whites mounted and we integrate everything delicately with the spatula.

10. We put the mixture in the mold that we have previously greased and floured.

11. Bake at 150º (preheated oven), heat up and down, for 80 minutes. We control the cooking and, if before those 80 minutes have passed we see that it is browning too much, we cover it with aluminum foil.

12. We remove from the oven. We let it cool down to room temperature. Once cold we put it in the refrigerator where it will be at least 3 hours.

13. At the moment of serving, we unmold our cake without turning it over, so it is better to use a removable mold. Decorate with icing sugar (optional).
