Chicken Delight with Mayonnaise

At home we always take something to eat at mid-morning at work. I like salty a lot more than sweet, so I'm always looking for new ideas. Mayra already taught us a few days ago a fantastic idea with her Creamy egg pate, so today I bring you another spreadable recipe based on chicken and mayonnaise.

Many times we have leftover chicken that we have cooked for example in a stew, in a rice, in a stew, and part of croquettes, we don't know what to do with it. Well, today I'm going to show you a very fast way to spend that chicken. And if this is not the case, what is easier than to cook some chicken thighs? In addition, we will add a rich mayonnaise sauce that we will make at home in our thermomix, without any preservatives or chemicals.

And if you have guests at home or a celebration, this is your option! First because you can leave it prepared in advance and second, because if we present it in an original way, we will have a luxury aperitif. For example, you can use vol-au-vents or tartlets and sprinkle them with small balls of substitute caviar or chives.

Creamy chicken delicacy with homemade mayonnaise, ideal as a starter or sandwich filling.

Ingredients

  • 4 chicken thighs without skin and well cleaned
  • 1 liter of water

For the mayonnaise:

  • 2 eggs
  • 400 g of very mild olive or sunflower oil (as you prefer)
  • a splash of vinegar or lemon (as you like)
  • 1 teaspoon of salt

Preparation

  1. The first thing we must do is prepare the already weighed oil and for this, we put a jug on top of the thermomix lid, press the scale function and weigh the oil, remove it and reserve it.

  2. We put the eggs, vinegar and salt in the glass. We program 1 minute and 1/2, temperature 80º, speed 5. At the end of the time, we reschedule immediately speed 5, without programming time or temperature, We pour the oil, little by little, on the lid, without removing the beaker. We stop the machine when we have incorporated all the oil.

  3. We lower the remains of the walls and the lid with the spatula, and we mix again 10 seconds, speed 3. We remove and rinse the glass a little (only with water).

  4. We add 1 liter of water to the glass and put the lid on. We place the varoma container on top, then we put a sheet of albal paper (there must be little holes of the varoma free), we brush with oil and, finally, we place the chicken drumsticks. We cover the varoma container and program 30 minutes, speed 2, varoma temperature.

  5. We let it cool down and remove the meat from the thighs. We put this meat in the glass, a pinch of salt and pepper and we crush 8 seconds, speed 5. We lowered the remains of the walls.

  6. Add 5 large tablespoons of mayonnaise and mix 10 seconds, speed 2 1/2. We test it to see if it lacks more mayonnaise and, if so, we add whatever we want and mix a few seconds at speed 2 1/2.

      Of course!! The reason to do it with thighs is because the meat is juicier, but of course, there is no problem in doing it with breasts. If you put them whole and they are large, with 20 minutes you have enough, so they will not be very dry. Lucky!
