The Mediterranean frittata is the latest discovery in my house. Combining flavors cheese, tomato and basil will transport us directly to the Mediterranean.
The frittata looks a lot like the tortilla but is never turned over. You just have to cover it with a cap that fits perfectly. In this way the egg curdles with the steam and remains very juicy.
Without a doubt the star ingredient are eggs and we all know that they are very versatile. They can be made poached, poached or rellenos, like the ones Silvia taught us. And they look great with almost all ingredients. So do not hesitate to combine different flavors to discover your own version.
