Ingredients

For the cheeks

  • 5 garlic cloves, crushed
  • 40 g olive oil
  • 400 g cheeks
  • 1 generous teaspoon (brown size) oregano
  • 2 generous teaspoons (coffee size) of La Vera paprika
  • 1/2 bay leaf
  • 1 teaspoon (coffee size) ground cumin
  • 1 pinch of thyme
  • 3 peppercorns
  • 150 g of white wine
  • 400 g of water
  • Salt and pepper

For the steamed vegetables with parsley oil and garlic

  • 1 large garlic clove
  • 20 parsley leaves or 2 tablespoons chopped parsley
  • 60 g olive oil
  • 1 large potato
  • 1 large carrot or 2 small ones
  • 100 g of zucchini
  • 60 g of bimi or broccoli

Preparation

  1. We start by preparing the garlic and parsley oil for the vegetables. For this we put the peeled and crushed garlic clove in the glass. Add the washed and dried parsley leaves.

  2. We pour the oil and program 20 seconds, speed 8. We lower the pieces towards the blades, remove and reserve.

  3. Now it is the turn of the cheeks. Without washing the glass we put the peeled and slightly crushed garlic cloves. Add the oil and brown them for 10 minutes, 120º, speed 1.

  4. We place the butterfly on the blades and add the cheeks and spices. We program 5 minutes, 100º, spoon speed, left turn.

  5. We pour the wine and program 2 minutes, varoma temperature, spoon speed, left turn.

  6. Add the water and salt and pepper. We program 25 minutes, varoma temperature, spoon speed, left turn.

  7. While we prepare the potatoes and carrots. We peel the first ones and cut them into not very thin slices. We scrape the carrots and cut them into 3 or 4 pieces on the side. We put the vegetables distributed between the varoma and the tray. We put the lid on and make sure it is tightly closed.

  8. At the end of the time, we remove the cup and place the varoma in its position. We program 14 minutes, varoma temperature, spoon speed, left turn.

  9. Then we carefully open the varoma and add the clean bimi cut into flowers and the clean zucchini cut into sticks or somewhat chubby slices.

  10. We continue cooking the glass and the varoma by programming 6 minutes, varoma temperature, spoon speed, left turn.

  11. We remove the varoma and always open it to the opposite side to us so as not to burn ourselves with the steam. We place the carrot, the bimi and the zucchini in a bowl and water them with the parsley and garlic oil.

  12. The potatoes are placed in a bowl next to the cheeks, both washed down with the sauce.

You can prepare a menu of 10 if in addition to the vegetables you cook a papillote of fruits in the varoma.

Cooking time may vary slightly depending on the size and quality of the cheek pieces. In any case, remove the varoma with the vegetables when they have been around 20 minutes to prevent them from becoming too soft.

As for the amounts and times you have to think that they are adjusted for 2 people. If you are going to make this recipe for more people you will have to increase the time.

You can also serve the cheeks with mashed potatoes. It is delicious when combined with the sauce of the recipe itself.

In addition, the cheek recipes can be made in advance. They keep without any problem for 2 or 3 days in the fridge. Maybe the sauce to solidify and it remains gelatinous but when heated it will return to its point.
