What if we prepare some muffin? We are going to make them with cashew nuts and they will taste a little orange because we will flavor them with the grated skin of one.

In the first steps we will chop the Cashews, sugar and orange peel. Then, also in the glass of our Thermomix, we will melt the butter. Then we will have to mix all the ingredients and bake them. That easy.

I don't know if you have rigid mold for muffins. The one I have had for a few years now is from Ikea, I suppose they will continue to sell it ... I have prepared other recipes with it: Orange cupcakes with chocolate, Wholegrain prune muffins y Lemon muffins

Ingredients

For the mass:

  • 100 g of sugar
  • 200 g cashew nuts
  • The skin of 1 orange, only the orange part
  • 100 g butter in pieces
  • 1 tablespoon of extra virgin olive oil
  • 3 eggs
  • 160 g whole milk
  • 200 g flour
  • 1 envelope of royal type baking yeast

For the surface:

  • 2 tablespoons sugar
  • 3 or 4 drops of orange juice

Preparation

  1. We put the sugar and the cashews in the glass. We shred it by programming 10 seconds, speed 7.

  2. We incorporate the orange peel and reprogram 10 seconds, speed 7. We take out and reserve.

  3. Without washing the glass we put the butter in it and program 2 minutes, 60º, speed 2.

  4. Add the mixture of sugar, cashews and orange peel.  We program 3 seconds, speed 3.

  5. We add the eggs, milk and flour. We program 30 seconds, speed

    5.

  6. We incorporate the yeast and program 5 seconds, speed 4.

  7. We prepare a rigid muffin mold and place a paper capsule in each hole.

  8. We put mass in the capsules, without filling them completely.

  9. In a glass we mix the sugar with a few drops of juice. We put a little moistened sugar on the mass of each capsule.

  10. We preheat the oven to 250º. When we go to bake the muffins we lower the oven temperature to 220º and bake them for approximately 15 minutes, until we see that they are golden brown.
