Lemon mug cake, easy!

I do not know if you have tried the cupcakes. The one that I propose today is lemon, it is prepared in a moment and it is taken warm, fresh from the microwave.

We prepare the dough in Thermomix with eggs, sugar, oil ... the typical ingredients of traditional cakes. The fun comes later: instead of putting the dough in a mold, each diner puts it in their cup (without filling it completely) and cooks it in the microwave. In a couple of minutes you will get a cake like the one in the photo, warm, because it will be freshly made. 

As you can imagine, children find it a lot of fun. You can prepare the dough in advance and put it in the refrigerator. When they get home from school, let them be you want to put it on their cups and see what happens in the microwave oven… it's a magic cake!

A very simple recipe that is prepared in less than 15 minutes: cup cake with lemon flavor.

Ingredients

• 2 eggs
• 120 g of sugar
• 1 organic lemon (the skin and the juice)
• 60 g of sunflower oil
• 50 g of water
• 250 g flour
• 8 g baking yeast (Royal type)

Preparation

1. We put the lemon skin in the glass (be careful, only the yellow part, not the white part) and chop it a few seconds at speed 5-10.

2. Add the eggs and sugar. We program 10 seconds, speed 4.

3. We now add the oil and water. Squeeze the lemon and put that juice in the glass as well. We program 10 seconds, speed 4.

4. Add the flour and yeast. We schedule now 7 seconds, speed 5.

5. We put a few tablespoons of that mixture in our cup (without filling it, with 2/3 will be enough) and heat it in the microwave, at 700 for approximately 2 minutes.

6. The time is approximate, it will depend on the size of your cup, the amount of dough that we have put and our microwave.

Notes

When made in the microwave, the cake is not browned. If we want, we can sprinkle icing sugar or cocoa on the surface.
