With this mushroom and arugula carpaccio we will have a simple starter and so light that it will surprise you.

The truth is that the recipe could not be simpler. We just have to laminate the mushrooms and make a lemon dressing with our Thermomix®.

With this and a little time we will have a healthy and vegan recipe that will serve as a starter or even as a garnish for your most succulent dishes.

Do you want to know more about this mushroom and arugula carpaccio?

To start I will tell you that for this recipe you can use the mushrooms that you like the most. So much with the whites, from Paris, like the brown ones or Portobello the recipe will suit you very well.

I recommend that the lemon be organic because we are going to use the skin and we want it to have flavor but without toxic substances.

The arugula can be spread over the mushrooms or placed in the center. In any case, it will provide those slightly bitter and spicy notes that we like so much.

The dressing will undoubtedly be one of the important parts of this recipe that is why I recommend that you use an oil of extra virgin olive that has flavor so that you leave your personal mark.

The rest of the mushrooms with the dressing cannot be too long. You know what the acidity of the lemon "cooks" the ingredients and we don't want the mushrooms to be too mushy.

The dressing that you over can benefit to dress vegetables, grilled chicken or steamed fish.

This recipe is simple and very quick to make. In addition, to enjoy the freshness of its ingredients, I recommend that you do it at the moment.

Although, if what you want is advance the processYou can make the vinaigrette and keep it in the fridge. So when preparing the recipe you will only have to laminate the mushrooms, marinate them and you will have them ready to serve.
