Ceviche is one of those recipes that unites the countries of the Pacific coast although, without a doubt, it should be noted that in Peru is considered cultural heritage.

Our version is made with specific ingredients such as coriander and lime that will give it a very particular and own touch. Although if you want a more national touch you can replace them with lemon and parsley although I assure you that they have nothing to do with it.

If yours is not the hot spicy you can play with the cayenne to give it the dot you want. You only have to remove part of the seeds and thus make it softer. You can even suppress it completely, although it will lose some of the grace of the ceviche.

Ceviche is a dish that it can't be done in advance, It must be done at the moment to control that the citrus fruits cook the fish or shellfish to their point.
