Although we will buy the octopus cooked, for my taste, it is always a little hard. Therefore, we will start the recipe by cooking it a little in the basket. We can also take the opportunity to use the varoma and cook potatoes, eggs or vegetables to use in other recipes. And, the best thing is that we can save the broth from the octopus cooking to make a delicious seafood rice. It works very well to store it in a glass jar in the fridge (it lasts 3 days) or freeze it for later use.

      In this recipe we have used the octopus that they sell already cooked. But I'll explain to you in a moment how I cook the fresh raw octopus in the super fast pot:
      We put water, beer, salt and bay leaf in the pressure cooker. When it is boiling we “scare” the octopus three times (holding it with our hand, we put it in the water and take it out quickly). When we have done it three times, we leave it in the water and close the pot. We will cook it under pressure for approximately 10 minutes. We take it out of the water and chop it up.
