Onion cream with potato

Surely many of you have tried the onion soup. It is very typical, of the Central European countries, although here, in Spain, we have it fully integrated into our winter cookbooks.

I love it and of course, when I saw this recipe based on onion and potato nor did I hesitate to test and adapt it. In addition, with Thermomix, our unconditional ally, the textures of the purees and creams are incomparably fine and creamy.

I will tell you about the flavor that, although it has a large amount of onion, it remains soft since the potato attenuates it a lot.

When decorating you can use the classics fried bread tostones but, this time, I have decided to accompany it with the egg yolk and parsley. So we have a very complete and nutritious dish. If we accompany it with some cheese and salmon toasts or homemade pate, we will have dinner ready!

Ingredients

• 30 butter g
• 20 g olive oil
• 600 g onion
• 250 g of potato
• 350 g of water
• Salt and pepper
• 4 yolks

Preparation

1. Put the butter and oil in the glass. Heat for 1 minute 30 seconds at 90º and spoon speed.

2. Add the peeled and quartered onions. Chop them up during 7 seconds at speed 5.

3. Poach them during 10 minutes, at 100º and speed 1.

4. After time, add the peeled and sliced ​​potato. Program 5 minutes, at 100º and speed 1.

5. Add the water, season and program 3 minutes, varoma temperature, speed 1.

6. Then schedule 15 minutes, 100º and speed 1.

7. Let cool until it reaches 80º. Crush it for 1 minute going from speed 5 to 9.

8. Serve hot with a raw yolk on top and a drizzle of olive oil.
