Peas with carrot and lettuce

Today we are going to prepare some peas with carrots and lettuce to make the most of your season.

Obviously this recipe can be made with frozen peas increasing the cooking a couple of minutes. Although if you have a garden or a generous neighbor who gives them to you, you can enjoy all the flavor of the fresh seasonal vegetables.

It is very simple to do and in less than 30 minutes you will have a light dinner. For one vegan version, dispense with the ham tacos. Don't substitute anything for them, not even tofu. So you can really enjoy vegetables.

Peas with carrots and lettuce have several very good qualities. In fact, all are advantages since it can be done with in advance. It also holds up very well for a couple of days in the fridge. And finally, it is an ideal recipe to transport, so do not forget to take it to work.

      These cazuelitas are from Casa but I have to tell you that they are many years old and I don't know if they will continue to have them.

      But don't worry, you can use any small casserole or even some ramekins.

      I love the Le Creuset mini cocottes. 😉
