Pineapple curd

To lovers of jams and homemade preserves They are going to love my latest whim. It is a curd pineapple, that is, a fantastic spreadable creamr smooth, silky and with all the flavor of pineapple.

If you liked the lemon curd you have to try this pineapple. Its flavor is much milder and not so citrusy. So it goes very well with everything. That's why I say is that it is my last whim because I can take it with toast for breakfast, with natural yogurt for dessert or for fill cakes or cookies for a snack ... a real downfall!

As it keeps well in the fridge, I don't need to vacuum pack it. Although I should try, I am very curious to see how these preparations behave with egg.

Without a doubt, this recipe for pineapple curd is already part of the selection of gourmet gifts. It can also be prepared in a moment and it will be very beautiful in a jar, with its label and with a beautiful bow.

Delicious pineapple-flavored spread.

Ingredients

• 250 g pineapple, peeled and cleaned
• 90 g of sugar
• 3 yolks
• 15 g cornstarch
• 50 g of unsalted butter
• 1 small pinch of salt

Preparation

1. We put the pineapple cut into pieces in the glass. We crush it by programming 15 seconds, speed 9. We lower the puree towards the blades and make sure that it is very fine.

2. Add the sugar, the yolks, the cornstarch and the pinch of salt. We mix during 5 seconds, speed 3. Next we program 8 minutes, 100º, speed 2.

3. After the time has elapsed, we add the butter cut into pieces and continue cooking, programming 2 minutes. 100º, speed 2.

4. To finish, we pour the contents of the glass into jars, let it cool and, when it reaches room temperature, close with the lid and store in the fridge.
