Pistachio brownie cookies

Preparation

1. We are going to melt the dark chocolate in our Thermomix. We place the 90 g of dark chocolate and the 30 g of butter in the glass. We schedule it during 2 minutes at 90 ° at spoon speed. We will see that the chocolate has been undone and mixed with the butter, if not, we will program it for a few more seconds.

2. We add the eggs, the 40 g of white sugar and the 30 g of brown sugar. We mix it during 20 seconds at speed 3. 

3. Next we add the rest of the ingredients: the 55 g of wheat flour, the 15 g of powdered poop, the half teaspoon of yeast and the teaspoon of vanilla extract. We mix it during 20 seconds at kneading speed. Finally we add the handful of pistachios and knead during 10 seconds at kneading speed.

4. We put the oven to heat to 160 ° and prepare a tray that can go to the oven lined with baking paper. We will make the shapes of the cookie with the help of a spoon, we will make small and round piles. In my case I have used an ice cream scoop maker. I have filled the spoon and just dropped the dough, without shaping it or anything. We put it in the oven for about 15 minutes.

5. We melt the white chocolate in the microwave at a low temperature. As it is a small quantity, I think it is convenient to put it in a small bowl and do it like that. We can put it in for about a minute and spin with the spoon until it falls apart. When the cookies are baked and cold, we can bathe them with threads of white chocolate. Then we will add the pieces of pistachios.
