Polvorones sponge cake

Oh, the Christmas feasts are over and we want to eat a little lighter. But surely you have leftover Christmas sweets at home, like polvorones, and you don't know what to do with them because nobody wants to eat them anymore ... well we have the solution! polvorones sponge cake!! For a snack or breakfast, with a coffee or tea, it is exquisite, I assure you.

In my case, I used the ones I had left, which were lemon, but you can take advantage of any flavor you have or even mix it with various flavors. It will be delicious, do you dare to try it?

Surprising cake to take advantage of Christmas sweets: polvorones cake. Ideal to take with a tea or coffee for breakfast or a snack.

Ingredients

• 250 g of polvorones
• 3 large eggs (L)
• 100 g of sugar
• 400 g whole milk
• 50 g of sunflower oil
• 1 envelope of Royal yeast
• Butter, margarine or olive oil to spread the pan

Preparation

1. We preheat the oven to 180º.

2. We put the polvorones in the glass and program 20 seconds, progressive speed 5-7-10. We lower the remains that have remained on the walls and the lid.

3. Add the eggs, sugar, milk, oil and the yeast envelope. We program 20 seconds, at speed 7.

4. Butter a mold (I used a 22 cm round mold), add the mixture and leave stand 10 minutes.

5. We put in the oven some 30 minutes at 180º. We click the center to see if it is already done.

6. We let it cool down a bit before unmolding.

Notes

Once done, it will hold up perfectly for about 4 days, tightly closed in a zip bag or a tupper. If it's too hot, keep it in the fridge.
