Potato stew with cod

Stew_patatas_bacalao

I am very fond of this recipe because my mother made it for me when I was little, and I have to admit that it will never be as rich as it is, but hey, this is a good adaptation to the Thermomix.

It's a potato and cod stew, very simple and healthy, and very tasty. In addition, it is one of the typical stews that gain in flavor and texture from one day to the next, so it is perfect to leave it prepared with advance.

Finally, it is a good option for children to eat fish, since when accompanied by potatoes and not having bones, it is very pleasant to eat. And, of course, it is perfect for these days that are approaching rainy and fresh.

I personally like to use cod fillets and cut them into small cubes myself to make sure there are no spines, but if it is more convenient you can use crumbs. And, what I do assure you, is that we must do it with desalted cod, not fresh, because the flavor and texture of the broth will have nothing to do with it.

At what speed in the different steps?

Oh forgive Carmen, it was my fault. Everything is spoon speed, I have already included it. Thanks for your notice! We go so fast that sometimes we leave these details without including ... ayyyy the heads ... Thanks, darling!

I will prepare it in no time. I'm going to like it for sure !! Is the broth liquid? I imagine that yes. I like "chubby", how could I thicken it?

With this amount, the broth is thick thanks to the potatoes and, above all, to the gelatin released by the cod. In fact, from one day to the next, the broth reduces even more and when we heat it we may need to add water or fish broth (I like it more liquid).

Anyway, if you like it chunkier when you go to add the cod, take out about 4 pieces of potato, put them on a plate, add 2 tablespoons of the broth and mash it with a fork until it becomes a puree. Add it to the glass along with the cod and in those 5 minutes of cooking the broth will thicken.

You'll tell me how! Thanks for writing to us, I hope you like it 🙂

Hi! My grandmother makes a potato stew with conger eel. Do you think I can do exactly the same by changing the cod for the conger eel?
