Potatoes to the importance with clams

Preparation

1. Peel and wash the potatoes. Cut them into medium thin slices and set them aside.

2. We prepare the flour dish. Beat the two eggs in another bowl. Heat the 100 ml olive oil in a skillet over medium heat.

3. Lightly sprinkle a pinch of salt on both sides of the potatoes and coat them in flour, dip them in the beaten egg and put them in the pan to fry.

4. We brown them on both sides. As we take them out of the pan, we will place them in order inside the Thermomix basket.

5. In our Thermomix glass we put the sprigs of parsley together with the two garlics. We'll shred it by programming 5 seconds at speed 7. We remove the mixture from the glass, but we do not clean it.

6. We put the glass back and add the 75 g of onion and the other two garlic. We schedule it during 2 seconds at speed 7. 

7. Lower the mixture to the bottom of the glass and add 60 ml of olive oil. We schedule it during 6 minutes at varoma temperature and speed 1. 

8. Add 1 tablespoon of wheat flour and program again 2 minutes at 100 ° at speed 2.

9. Add the garlic and parsley that we had reserved, the 65 ml of white wine, the 65 ml of water and salt. Place the basket with the potatoes and program for 23 minutes at varoma temperature, spoon speed (turn to the left).

10. Finished cooking, remove the basket with the spatula, being careful not to burn yourself. Add the clams and program again for 2 minutes at varoma temperature at spoon speed.

11. When we have it ready, we transfer everything to a large frying pan or casserole. Place the potatoes on the base and add the sauce and clams on top. If you have little sauce, we can add a little water. The idea is that you have to cook everything together for a few minutes, so that the flavors blend. We put it to cook for 5 minutes and that's it!

    Now we can enjoy our potatoes to the importance, where we can decorate them with another little bit of chopped parsley. To enjoy!
