Pumpkin and cauliflower soup

Ingredients

• 75 g shallot
• 1 dried cayenne (without seeds)
• 30 g olive oil
• 400 g of clean pumpkin
• 300 g cauliflower
• 600 g of mineral water
• Salt and pepper
• Curd
• Pumpkin seeds

Preparation

1. Chop the shallots and cayenne by programming 5 seconds, speed 7. Lower the chips onto the blades. Add the oil and fry for 5 minutes, 100º, speed 1.

2. Add the pumpkin and chop it by programming closed cup, turbo, 2 seconds. Lower the pieces back onto the blades, add the cleaned cauliflower in small bunches and the mineral water. Season and cook for 30 minutes, 100º, speed 1.

3. At the end of the time, let the temperature drop a little and blend for 45 seconds, progressive speed 5-7-9.

4. Serve on plates and bowls. Finish decorating with a little cottage cheese and some pumpkin seeds.
