Pumpkin and Potato Crocchette

Preparation

1. We put the Parmesan in the glass and grate it by programming 10 seconds, speed 10. We put it in a bowl and reserve it.

2. We put the water and salt in the glass. We place the basket inside the glass and in it we add the pumpkin. We distribute the chopped potato in the varoma and place it in position. We program 20 minutes, varoma temperature, speed 1.

3. We carefully remove the varoma and the basket. Let the pumpkin and potato cool for a few minutes.

4. We remove the water from the glass.

5. Put the pumpkin, the potato, the grated Parmesan, the breadcrumbs and the egg yolk in the glass without water. We program 30 seconds, speed 5. We booked.

6. We prepare the ingredients for the batter: the egg white and the breadcrumbs. So that we do not lack clarity we can add a little milk. Another option is to use another egg if we run out of white.

7. We form the croquettes with the help of two spoons and we pass them first through the egg (or through the mixture of white and milk) and then through the breadcrumbs.

8. We can reserve the croquettes for a few minutes in the refrigerator.

9. We fry the croquettes in plenty of sunflower oil and place them on a plate with absorbent paper.
