Pumpkin soup with prawns and caviar

La pumpkin soup with prawns and caviar is the perfect recipe for a first course for December 24, 25 and 31 or January 1 and 6. It is light, low in calories and prepares our stomach for a good second of meat or fish, such as a tasty suckling pig in two boils.

Do not be scared by the title, I have used a substitute for caviar, which is very tasty. Now you can find prawns at a variety of prices, so it's as simple as buying the ones on sale or those that best suit our pockets.

We can leave everything ready, just in the absence of heating the soup and making the assembly. It is one of the very easy recipes.

Ingredients

• 30 gr of leek
• 30 gr of olive oil
• 400 gr of peeled and chopped pumpkin
• 100 gr of potato peeled and chopped
• 500 gr of chicken broth, vegetables or salt water
• 1 teaspoon of salt
• 1 pinch of pepper
• 12 cooked and peeled prawns
• 150 gr of cream
• 4 teaspoons of caviar substitute to decorate

Preparation

1. We put the leek and the olive oil in the glass. We shred 3 seconds, speed 5. We lower the remains of the walls and the lid and program 5 minutes, speed 1, varoma temperature.

2. Add the pumpkin and potato and chop 4 seconds, speed 4. We lower the remains of the walls and the lid and program 5 minutes, speed 2, varoma temperature.

3. Add the broth or water, salt, pepper and program 15 minutes, speed 2, temperature 100º. We wait for the temperature to drop to 80º and we crush 1 minute, progressive speed 5-7-10.

4. We add the cream and program 3 minutes, 90º, speed 2.

5. We serve the soup on a plate, place the prawns and top it with the caviar.
