Ingredients

  • 200 g of peeled raw almonds
  • 250 g leek sliced ​​(only the white part)
  • 1 garlic clove
  • 70 butter g
  • 30 g olive oil
  • 1000 g poultry broth
  • 1 pinch of nutmeg
  • 300 g of cream (35% fat)
  • 1 teaspoon of lemon juice
  • Sal Island
  • Fried leek or toasted sliced ​​almonds for garnish

Preparation

  1. We put the almonds in the glass and crush them by programming 10 seconds at speed 6. We reserve in a bowl.

  2. Add the leek and garlic and chop while programming 5 seconds at speed 5. We lower the remains of the walls with the spatula.

  3. Add the butter and oil and program 5 minutes, varoma temperature and speed 1.

  4. Add the reserved almond and 800 g of the poultry broth and blend 1 minute at speed 7.

  5. We add the nutmeg and the pepper and we program 20 minutes, temperature 100º and speed 2.

  6. Add the rest of the broth, the cream, the lemon juice and the salt. We program 5 minutes, temperature 90º and speed 3.

  7. We shred programming 1 minute at progressive speed 5-10.

  8. Serve hot with fried leek or sliced ​​almonds.
