Basic recipe: quinoa flour

The ones you wear a gluten-free diet I'm sure you already know quinoa flour. It is an alternative to wheat flour totally suitable for celiacs.

With Thermomix it is very easy grind the grains to get a flour with the texture that we like the most. So although I have chosen to pulverize it, you can give it different textures.

Quinoa has more protein and better quality than wheat or corn. It also has a high content of omega 3, although it must be taken into account that when food is crushed they are more susceptible to oxidation. So when you make this quinoa flour at home, I recommend that you use it as quickly as possible.

Although the quinoa flour is not bread-ready, we can use it as a complement and mix it with other flours to make delicious breads. In addition to preparing salty cookies, waffles, pancakes, biscuits or pie crusts. Even to make sauces or thicken soups or purees.

You already know that quinoa has saponins, so before cooking You have to wash the grains well until they stop releasing a kind of foam. However, to make quinoa flour we have to roast the beansThis way we will avoid that the flour is bitter.

When toasting the beans, moisture is also lost, so with 500 grams of quinoa beans we will obtain about 400 grams of flour. Enough to prepare the delicious recipes that we will show you little by little.

    Hola!
One doubt, shouldn't it be rinsed to remove the bitter taste?
    Thank you

      Hi Denisse,

That depends a bit on the brands, so you will have to test with them.

If yours when rinsing it to make other recipes foams it is that it has saponin, then you will have to rinse it.

      Kisses!

To make flour, do you have to wash the grains before roasting?

    1.    Mayra Fernandez Joglar said

      Hello Elena:
I don't wash it but if you want you can.
Remember that you will have to put them on a clean cloth to "dry" them before toasting.

      Regards!
