Came the day!! I present the recipe for the presentation of the Quinoa: quinoa with feta cheese and blueberries. It is an ideal recipe to enter the world of quinoa, to know its texture and flavor that are very different from what you have tried before. We could say that it is something similar to couscous but more crunchy. It is a recipe similar to salads that is easy and quick to make and that I think you will like.

The good thing is that you can leave it ready in advance and take it in the tupper to work or to the field.

We will cook the quinoa in our thermomix glass and then we will dress it in a salad bowl. I have used Dried cranberries (bought in Mercadona), but you can buy them fresh or frozen if you find it more easily.

We discovered quinoa with an ideal recipe for vegetarians and low-fat diets based on quinoa with blueberries and feta cheese. Ideal as a garnish.

Ingredients

  • 200 gr of dry quinoa
  • 700 gr of water
  • shawl
  • 100 g of dried cranberries (which we let hydrate in hot water while we cook the quinoa)
  • 1 small or medium spring onion if medium
  • 50 gr of olive oil
  • 200 gr of feta cheese
  • Juice of 1/2 lemon
  • shawl
  • chopped parsley (optional)

Preparation

  1. We put the water, the salt and the quinoa in the glass. We program 20 minutes, 100º, left turn, spoon speed. We drain the quinoa in the fine strainer and leave it in a salad bowl and wait for it to cool down a bit.

  2. We dry the glass (it is not necessary to wash it) and we put the chives. We shred 5 seconds, speed 4. We put it where the quinoa is.

  3. Add the hydrated blueberries (we leave some to garnish) and mash 4 seconds, speed 4. We add together with the quinoa.

  4. Add the diced cheese, reserving a few pieces to garnish (I also buy it at Mercadona which is already diced), the oil, the salt and the lemon juice and the chopped parsley. We stir well. We taste and rectify lemon or salt. You can sprinkle a little parsley to garnish, if you want.

  5. Ready to eat! It is richer if we let it rest for a few hours. So if you are going to make it for lunch, you can prepare it in the morning and leave it in the fridge.

    Yesterday I made this recipe and made a change, I put tofu instead of feta cheese and even made it a recipe suitable for vegans. I have fallen in love with the flavor and how balanced the ingredients are. I can no longer live without you ... Thank you very much! 😉
