Ratatouille

Preparation

1. We salt the aubergine, cut into cubes, and let it rest for a few minutes.

2. Meanwhile, we crush the onion. We program 5 seconds, speed 7. We add 30 g of oil (be careful, in the ingredients it puts 60g but in this first step we put 30g), the mushrooms and the pieces of pepper. We cook 8 minutes, 100º, left turn, spoon speed.

3. Add a little salt and pepper. Add the sugar and the teaspoon of vinegar and program 7 minutes, varaoma temperature, left turn, spoon speed.

4. We put this already cooked vegetable in a bowl and reserve it.

5. Without having to wash the glass, we put the garlic clove and the parsley in it. We program 5 seconds, speed 7. With the spatula, we lower what is left on the walls and add the rest of the oil (30g) and the well-dried aubergine. We program 12 minutes, 100º, left turn, spoon speed.

6. Once the aubergine is cooked we put it together with the rest of the vegetables that we had in the bowl. We mix them carefully with the spatula and serve immediately.
