Al red pesto or rosso is also known by the name of Sicilian pesto. A variant of the known Genoese pesto made with dried tomatoes.

    I encourage you to prepare the pesto. I made it this week and it was easy, quick, and tasty. You can find the ingredients in Carrefour -fresh basil-, dried tomatoes -Mercadona- and pine nuts -Más y Más-. I give you the names of the supermarkets that have these products at the best price.
    I do not advise adding chilli - I did not add it - because the flavor already has enough personality and it may not be that everyone takes an extra spice well.
    We take it some with pasta and others on previously baked slices of aubergine. Delicious and with the option of aubergine, suitable for those who do not want to gain weight. I think it could be served with grilled fish and meat or on provolone cheese.
