Thanks to its easy transport, this rice and prawn salad can be used to take away and eat away from home. It can also be prepared in advance, so it is a recipe to take into account if we are organizing a picnic in the field or a day at the beach.

It could be perfectly accompanied with Mayonnaise But this option is not recommended if you are away from home because it would break down. So I propose a lemon mustard dressing which goes perfectly with rice salad.

Of course, it is best to dress it at the time of taking it, so you should take the salad in a airtight container and the seasoning in another or, failing that, in a glass jar with a lid.

Ingredients

  • 75g basmati or long grain rice
  • 50 g of mixed salad
  • 75 g of prawns
  • 1 Carrot
  • 40 g sweet corn
  • Sal Island

For the dressing:

  • 10 g old mustard
  • 1 tbsp of lemon juice
  • 30 g of virgin olive oil
  • Salt and pepper

Preparation

  1. Put about 800 g of water in the glass, heat for 5 minutes, 100º, speed 1.

  2. Place the prawns in the Varoma, sprinkle a little salt and reserve.

  3. Season the water in the glass and place the basket with the rice inside. Program 14 minutes, Varoma temperature, speed 4. Stir from time to time with the spatula so that the rice does not remain caked.

  4. When there are 5 minutes to finish cooking, place the Varoma in position.

  5. While the rice is cooking, wash the salad leaves and drain them well. Scrape, wash and dry the carrot. Cut it into small cubes of similar size. Rinse the sweet corn and reserve all these ingredients in a wide salad bowl.

  6. After time, remove the Varoma taking care not to burn yourself. Also remove the basket, refresh the rice to cut cooking and drain well.

  7. Add the rice and prawns to the rest of the ingredients and reserve in the fridge.

  8. Discard the cooking water and rinse the glass. Put all the ingredients of the dressing. Beat for 15 seconds at speed 3.

  9. Dress the salad with this dressing.
