Roasted sweet potato cream

I do not know if it happens to you but the return to the routine is doing me wonderfully. What I want most these days are stews and since the body is very wise, I am preparing all kinds of soups, stews and creams.

The other day I improvised a roasted sweet potato cream, taking advantage of the fact that I had one prepared to repeat the recipe of the balls with cabrales. And I have also started to incorporate a little turmeric. I do not know if you know but it is an ingredient anticancer fantastic.

I will not deny that I was a bit skeptical I thought it would add flavor but no, nothing like that. This roasted sweet potato cream has a sweet taste and a striking orange color. So this vegan cream it is already part of my collection of favorite recipes.

Delicious vegan and anti-cancer cream prepared with vegetables and roasted sweet potato.

Ingredients

• 50 g onion
• 10 g oil
• 1 teaspoon (of coffee) turmeric
• 1 Zucchini
• 2 medium potatoes
• 1 Carrot
• 1 roasted red sweet potato
• 550 g of vegetable broth
• Salt and pepper
• Hazelnuts for garnish (optional)
• Thyme for garnish (optional)
• Sesame for garnish (optional)

Preparation

1. We chop the onion during 3 seconds, speed 5. We lower the pieces towards the blades. Add the oil and fry for 5 minutes, 100º, speed 1.

2. While we wash the zucchini and remove the ends. We peel and scrape the potatoes and carrots and wash these vegetables well. We chop them and, at the end of the time, we add them to the sauce together with the turmeric. We program 5 minutes, 100º, speed 1.

3. Next we add the vegetable broth. Season to taste and cook for 18 minutes, 100º, speed 1.

4. Add the roasted and peeled sweet potato. We crush during 1 minute, progressive speed 5-7-9. We rectify if necessary.

5. Divide into bowls and finish decorating with hazelnuts, sesame and a little thyme.
