Roscón without egg

In the photo you will not see the traditional Roscón de Reyes, neither by the ingredients nor by the form, but it is a good option for people allergic to eggs.

We are going to substitute this ingredient for a little apple cooked with water and cinnamon. By the way, do not throw away the cooking water: it is a delicious infusion that the little ones like a lot.

If you want, you can shape it into a Roscón de Reyes and decorate it with the traditional candied fruit. I have preferred to do it like this, with buns and nuts, just for a change and for proposing something different.

If I wanted to do it with eggs, how many would I put and if the recipe varies, thank you Happy New Year.

Hello Consuelo, Happy New Year! Use two eggs in place of the apple. Put them next to the milk, the butter ... in that step. I hope you like it.
      A hug!

Hello, this recipe has come in handy because my niece has an egg allergy and has a sweet tooth. You are sure to enjoy it.

I also want to tell you that you have forgotten to put in which step the sugar and the orange peel are added.

    Thank you.

Thanks, Pedro, you are absolutely right and it is already corrected.
I hope your niece liked it 🙂
      A hug!

Hello Ascen! Last year I made your roscón for my daughter who is allergic to eggs and it turned out to be luxurious. But this year nothing at all, that the dough does not lift. Have you changed any ingredient in the recipe? I don't know, I just want to remember that the yeast I used when it came out was fresh, not powdered. Thank you and a hello

      Hi Malale,
The recipe is the same, we have not changed it. How strange that this time it did not come out ... But in any case you can use both fresh and dry baker's yeast, as long as the dry yeast is baker's yeast and not pastry yeast (but I suppose that would not have been). Keep in mind that the equivalence for the dry one would be a third of the fresh one.
      A hug!

Hello!!! What other non-wheat flour can you substitute ??? Thank you very much.

Hello Elena, you can do it with gluten-free flour anyway, the Proceli brand corn gives very good results. Thanks to you for writing us!
