The other day at the market I was captivated by the rich smell that some peaches. Needless to say, I bought a couple of kilos and after doing jam I still had a couple of pieces left over to make a special dessert.

The ingredients are very basic although it is essential to have a quality fruit and a little rosemary. Take advantage of a field trip to pick up a twig.

For the preparation time, do not worry because in less than 20 minutes they will be done. Although the best of all is that the little ones can help by decorating the peaches and adding the nuts and honey.

This delicious peach-based recipe has all the aroma of fruit and rosemary. Easy and quick to do and so practical that it can be done the day before.

Ingredients

  • 2 peaches
  • 1 squirt of lemon
  • 1 tablespoon of rosemary leaves
  • 30 g of white sugar (15 g + 15 g)
  • 1 creamy yogurt (Greek type)
  • 100 g cheese spread
  • 20 g of nuts
  • A few mint leaves (optional)
  • Romeo honey (optional)

Preparation

  1. The night before, peel the peaches, cut them in half and remove the pits. Sprinkle them with the lemon juice so they don't get ugly.

  2. With the glass clean and dry, pulverize 15 g of sugar and the washed and dried rosemary leaves. Program 10 seconds, progressive speed 5-7-9. Sprinkle the rosemary sugar on top of the peaches. Cover with plastic wrap and reserve in the fridge.

  3. The next day, place the butterfly on the blades. Arrange the cheese, yogurt and the remaining sugar. Beat for 30 seconds, speed 3 1/2. Remove the cream to a piping bag with a curly nozzle and also reserve in the fridge.

  4. At the moment of serving, remove the film from the peaches and make a rosette with the cream cheese in the hole in the pit. Chop the nuts and divide them among the 4 halves. Accompany with a few leaves of rosemary or mint. Another option would be to decorate them with a few strings of honey.
