At home we really like green peas and although most of the time we prepare them as an accompaniment we also usually prepare them as principal ingredient as for example in this aromatic pea cream.

To make this recipe we have used a Bouquet Garni. It is a very typical element of the most traditional cuisine and without which we will not achieve the same results, even if it is no more than a coffin made from bay leaf, thyme and parsley. It can be bought in greengrocers but it is also very easy to do it at home, we just have to take a bay leaf, a branch of thyme and parsley and tie it with kitchen string.

You can include the aromatic pea cream to prepare a light dinner because, although peas are legumes, they provide few calories and many benefits.

Do not forget to remove the bouquet garni and the cloves before crushing the cream.

Ingredients

  • 250 g guisantes
  • 400 g of water or vegetable broth
  • 1 medium onion
  • 1 leek
  • 1 ham bone
  • 1 bouquet garni
  • 1 clove
  • Salt and pepper
  • Fried bread (optional)

Preparation

  1. We peel the onion, cut it into quarters and put it in the glass. We clean the leek well, cut it into 3 or 4 pieces and add it together with the peas, water and the bouquet garni.

  2. We puncture the cloves in the meat of the ham bone and we put it with the rest of the ingredients. We program 40 minutes, 100º, speed 1, left turn.

  3. After time, we remove the bouquet garni and the ham bone, checking that the cloves are present. We grind the rest during 1 minute, progressive speed 5-7-9.

  4. Rectify with salt and sprinkle a little freshly ground pepper, but without overdoing it so that it does not cover the rest of the aromas.

  5. Cut some of the meat from the ham bone into small cubes. We serve the aromatic pea cream and decorate the containers with the ham and fried bread.
