Zarangollo - Scrambled eggs with onion, eggs and zucchini

It's today zarangollo. Do you know this dish? If you are from Murcia or have been there, you will tell me of course. For those of you who have never taken it, I encourage you to try it.

It is made with healthy, simple, rich ingredients and, of course, from the Murcian garden. It's kind of scrambled a base courgettes, onions and eggs. What does it look good for?

Murcians will tell me how you eat it at home but I think it can be presented as a first course or as a side dish in a second.

I do not know if you have already tried this tortillaThat of courgettes… Its flavor reminds me a bit of zarangollo, maybe that's why I like it so much!

    It came out a bit soggy for me that I could fry it a little so give it an egg?

      In order not to stain more pots, I would remove the broth before adding the eggs. So we avoid staining the pan 😉

    Thanks for the recipe, it comes out really good!
    I just have one question, why does it end up burning / sticking to the bottom of the glass? I have the TM31, I have followed the recipe to the letter and it has burned the 4 times that I have done it 🙁 I have tried to put some more oil, to stir the bottom with a spatula 2-3 times during the process, and nothing, always burned down ...

      I also do it with the 31 ... Maybe it depends on the zucchini, if it has more or less water ... Try to program a few minutes less, to see what happens.
