If you like trying new things let me surprise you with this recipe for shrikhand with cardamom and saffron. A dessert from the indian cuisine that we can do in a simple way at home.

The secret of this recipe is to lovingly prepare the chakka or what is the same a drained yogurt. Then you just have to flavor it and give it your personal touch. I assure you that the most gourmets will appreciate its nuances.

And do not forget to serve it cold. You don't have to freeze it but I assure you that it is much better fresh out of the fridge.

Do you want to know more about shrikhand with cardamom and saffron?

To make chakka or strained or drained yogurt, it is as simple as putting quality Greek yogurt on a cheese making cloth or large gauze and tie the corners. We will leave it in suspension on a container but without touching each other, it will release the serum better.

I usually leave it overnight, so the next morning I can use it to prepare the recipe that I want.

El cardamom It is a spice that is widely used in Indian cuisine. Thanks to new trends, it is now much easier to find it in supermarkets.

If you still have problems buying it, I recommend that you take a tour of a supermarket of Asian food or run by Pakistanis or Hindus. It is not usually lacking in the spice section.

If shrikhand has a yellowish color thanks to the saffron. If you want your recipe to have the highest color, you just have to play with the amount of saffron and especially with the time you let it infuse.

To decorate you can use a thousand and one things. This time I have used pistachios and almonds But if you have problems with nuts, don't hesitate to use seeds to give it a crunchy touch. Try caramelised sesame and you will see how delicious.

If you are a fan of Middle Eastern cuisine, surely the chakka will be very similar to the labneh. And is that the system to obtain both is the same, you just have to drain yogurt to separate serum from solid matter.

Then come the nuances such as, for example, the type of milk with which the yogurt has been made or even the fabrics that are used to drain but do not worry that these are peculiarities to be an expert or a true purist.

I can assure you with a good Greek yogurt you get very good results and a creamiest dessert.

Could you use a goat's milk yogurt instead of the Greek yogurt, which goes with cow's milk? Thanks.

I've never made it with goat's milk ... I guess so as long as it's creamy.

      Regards!!
